1 cup (2 sticks) unsalted butter
2 cups granulated sugar
1/2 cup milk
1 teaspoon vanilla extract
3 cups rolled oats
1/2 teaspoon flaky sea salt, for topping
Instructions
Line a baking sheet with parchment paper.
In a medium saucepan, melt the butter over medium heat.
Stir in the granulated sugar and milk. Bring the mixture to a boil, stirring constantly.
Boil for 1 minute, then remove from heat.
Stir in the vanilla extract and rolled oats until well combined.
Drop spoonfuls of the cookie mixture onto the prepared baking sheet.
Immediately sprinkle with flaky sea salt.
Let the cookies cool and set for at least 30 minutes before serving.
Notes
For a richer caramel flavor, use a good quality caramel candy instead of making the caramel from scratch. Melt the caramel candy with the butter and milk.
You can add chocolate chips or chopped nuts to the mixture for extra texture and flavor.
Store leftover cookies in an airtight container at room temperature for up to 3 days.
