1 pound smoked or Italian sausage, sliced
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces dry pasta (like penne or rotini)
1 cup heavy cream
2 cups shredded cheddar or mozzarella cheese
Instructions
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage and cook until browned, about 5 minutes. Remove sausage and set aside, leaving any drippings in the skillet.
Add onion to the skillet and cook until soft, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
Stir in diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender.
Stir in the heavy cream and the cooked sausage. Continue to cook, uncovered, for 2 to 3 minutes until the sauce thickens slightly.
Remove the skillet from the heat. Stir in the shredded cheese until completely melted and creamy. Serve immediately.
Notes
You can substitute smoked sausage with mild or hot Italian sausage for a different flavor profile.
For a richer sauce, use half-and-half instead of heavy cream.
