Make this easy one pot cheesy sausage pasta for a quick weeknight dinner with minimal cleanup. Everything cooks together in one skillet.

  • 1 pound smoked or Italian sausage, sliced
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces dry pasta (like penne or rotini)
  • 1 cup heavy cream
  • 2 cups shredded cheddar or mozzarella cheese

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage and cook until browned, about 5 minutes. Remove sausage and set aside, leaving any drippings in the skillet.
  2. Add onion to the skillet and cook until soft, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender.
  5. Stir in the heavy cream and the cooked sausage. Continue to cook, uncovered, for 2 to 3 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat. Stir in the shredded cheese until completely melted and creamy. Serve immediately.

Notes

  • You can substitute smoked sausage with mild or hot Italian sausage for a different flavor profile.
  • For a richer sauce, use half-and-half instead of heavy cream.
  • This recipe works well with any short pasta shape that cooks quickly.
