Make these simple, bite-sized pecan pie balls without turning on your oven. They capture the rich, nutty flavor of classic pecan pie in an easy confection perfect for holidays or gatherings.

  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for coating)
  • 1 tablespoon coconut oil (for melting chocolate)

Instructions

  1. Place the finely chopped pecans, graham cracker crumbs, powdered sugar, and brown sugar in a medium bowl. Mix these dry ingredients together well.
  2. In a separate small bowl, whisk together the corn syrup, melted butter, vanilla extract, and salt until combined.
  3. Pour the wet mixture over the dry ingredients. Stir everything together until a thick, uniform dough forms.
  4. Cover the bowl and chill the dough in the refrigerator for at least 30 minutes to firm up.
  5. Once chilled, scoop the dough using a small cookie scoop or roll into 1-inch balls. Place the balls on a parchment-lined baking sheet.
  6. Return the sheet to the refrigerator while you prepare the chocolate coating.
  7. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
  8. Dip each chilled ball into the melted chocolate, ensuring it is fully coated. Use a fork to lift the ball out, allowing excess chocolate to drip off.
  9. Place the coated balls back onto the parchment-lined sheet.
  10. Refrigerate the finished pecan pie balls for about 15 minutes, or until the chocolate coating is set.

Notes

  • For a Pioneer Woman inspired touch, you can drizzle extra melted chocolate over the set balls for decoration.
  • If you prefer a stronger pecan flavor, toast the pecans lightly before chopping them.
