  2. Prick each sweet potato several times deeply all over using a fork. This allows steam to escape during baking.

  5. Place the seasoned potatoes directly onto the center oven rack. Do not use foil or a baking sheet, as this traps steam and prevents the skin from crisping.
  6. Bake for 45 to 60 minutes. The exact time depends on the size of your potatoes. Start checking for doneness at 45 minutes.
  7. The baked sweet potato is done when the skin is slightly wrinkled and crisp, and you can easily pierce the center with a fork with no resistance.
