3 cups cooked day-old jasmine rice
1 tablespoon vegetable oil
1 cup diced cooked chicken breast (or shrimp)
1/2 cup diced yellow onion
1/2 cup diced carrots
1/2 cup frozen peas
2 cloves garlic, minced
1/4 cup fresh pineapple, diced
2 tablespoons soy sauce
1 tablespoon oyster sauce (omit for vegetarian)
1 teaspoon fish sauce
1/2 teaspoon ground ginger
1/4 teaspoon white pepper
1 large egg, lightly beaten
2 tablespoons chopped green onions, for garnish
1/2 fresh pineapple, halved and hollowed (optional, for serving)
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the beaten egg and quickly scramble until just set. Remove the egg from the skillet and set aside.
Add the diced onion and carrots to the skillet. Stir-fry for 3 minutes until slightly tender.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the cooked chicken (or shrimp) and frozen peas. Cook for 2 minutes, stirring constantly.
Push the ingredients to one side of the skillet. Add the day-old rice to the empty space. Break up the rice with your spatula and let it cook for 1 minute without stirring to achieve a slight crispness.
Stir the rice and vegetable mixture together.
Add the diced fresh pineapple, soy sauce, oyster sauce, fish sauce, ground ginger, and white pepper. Stir well to combine and heat through, about 2 minutes.
Return the scrambled egg to the skillet. Toss everything together until evenly mixed and heated through.
Taste and adjust seasoning if needed.
Serve immediately, garnished with chopped green onions. For presentation, serve the rice inside the hollowed-out pineapple halves.
Notes
Use cold, day-old cooked rice for the best fluffy texture in your fried rice.
For a vegetarian option, substitute the chicken with firm tofu cubes and use a vegetarian stir-fry sauce instead of oyster sauce.
If you skip the optional pineapple bowl, use the scooped-out pineapple flesh in the rice mixture.
