1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 cup chicken broth or water
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cut the chicken into uniform, bite-sized pieces. Pat them dry with paper towels to help them brown better.
Season the chicken pieces evenly with salt, pepper, and paprika.
Heat the olive oil in a large skillet over medium-high heat.
Add the seasoned chicken to the hot skillet in a single layer, avoiding overcrowding. Cook for 4-5 minutes until golden brown on all sides and cooked through. Remove the chicken from the skillet and set aside.
Reduce the heat to medium-low. Add the butter to the same skillet. Let it melt completely.
Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth or water and scrape up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute.
Return the cooked chicken bites to the skillet. Toss everything together until the chicken is fully coated in the garlic butter sauce.
Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
For crispier bites, cook the chicken in two batches and do not stir them for the first 2 minutes of cooking.
