1 pound bulk breakfast sausage
1 (8 ounce) package cream cheese, softened
1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
1 cup shredded cheddar cheese
Instructions
Brown the breakfast sausage in a skillet over medium heat. Drain off any excess grease completely.
In a slow cooker or a medium saucepan, combine the cooked sausage, softened cream cheese, and the undrained diced tomatoes and green chilies.
Stir the mixture until the cream cheese is fully melted and everything is well combined.
If using a slow cooker, set it to low and cook for 30 minutes, stirring occasionally. If using a saucepan, heat gently over low heat until warmed through.
Stir in the shredded cheddar cheese until it is melted and the dip is smooth and creamy.
Transfer the dip to a serving bowl. Serve hot with tortilla chips, crackers, or vegetable sticks.
Notes
For a quicker stovetop version, combine all ingredients except the cheddar cheese in a saucepan and heat until the cream cheese melts. Stir in the cheddar last.
If you prefer a less spicy dip, use mild diced tomatoes and green chilies.
