Make this simple, creamy seafood salad at home. It tastes better than store-bought versions and is perfect for a quick lunch, sandwich filling, or potluck side dish.

Ingredients

  • 1 pound imitation crab meat, shredded
  • 1/2 pound cooked shrimp, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Old Bay seasoning
  • Salt and black pepper to taste

Instructions

  1. If using frozen shrimp, thaw them completely and pat them very dry with paper towels.
  2. In a large bowl, combine the shredded imitation crab and chopped shrimp.
  3. Add the celery and red onion to the seafood mixture.
  4. In a separate small bowl, whisk together the mayonnaise, relish, lemon juice, Dijon mustard, and Old Bay seasoning until smooth.
  5. Pour the dressing over the seafood mixture. Gently fold everything together until the seafood is evenly coated. Do not overmix.
  6. Taste the salad and add salt and pepper as needed.
  7. Cover the bowl and chill the seafood salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to combine.

Notes

  • For a brighter flavor, substitute half of the mayonnaise with plain Greek yogurt for a lighter texture.
  • You can replace the imitation crab with real lump crab meat or cooked salmon for a different flavor profile.
  • Serve this salad on lettuce cups, toasted bread for sandwiches, or with crackers as an appetizer.
