1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (24 ounce) jar marinara sauce
1 (14.5 ounce) can diced tomatoes, undrained
1 cup water
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
9 no-boil lasagna noodles, broken into thirds
1 (15 ounce) container ricotta cheese
1 large egg
1/4 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Instructions
Heat olive oil in a large, deep skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Stir in marinara sauce, diced tomatoes (with juice), water, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Nestle the broken lasagna noodles into the sauce mixture. Cover the skillet and cook on low heat for 10 to 12 minutes, or until the noodles are tender. Stir gently halfway through cooking to prevent sticking.
While the noodles cook, combine the ricotta cheese, egg, and Parmesan cheese in a small bowl. Mix well.
Once the noodles are cooked, remove the skillet from the heat. Drop spoonfuls of the ricotta mixture evenly over the top of the sauce.
Sprinkle the mozzarella cheese over the ricotta layer. Cover the skillet again and let it sit off the heat for 5 minutes, allowing the cheese to melt and the layers to set.
Serve directly from the skillet.
Notes
You can substitute ground turkey or sausage for the ground beef.
For a healthier version, stir in 1 cup of chopped spinach with the onions.
If you do not have no-boil noodles, use regular lasagna noodles, but you must boil them according to package directions first, then reduce the liquid in the sauce by 1/2 cup.
