Sloppy Joe Grilled Burritos

Enjoy a quick and easy twist on classic sloppy joes with these cheesy, griddled burritos. Perfect for a weeknight family dinner.

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter or oil for cooking

Instructions

  1. In a large skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain off excess grease.
  2. Stir in ketchup, brown sugar, vinegar, Worcestershire sauce, and mustard. Season with salt and pepper.
  3. Simmer uncovered for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  4. Warm the tortillas slightly to make them pliable.
  5. Spoon about 1/2 cup of the sloppy joe mixture onto the center of each tortilla.
  6. Top the sloppy joe mixture with about 1/4 cup of shredded cheddar cheese.
  7. Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
  8. Melt butter or heat oil in a clean skillet over medium heat.
  9. Place burritos seam-side down in the skillet and cook for 3-5 minutes per side, until golden brown and crispy, and the cheese is melted.
  10. Serve immediately.

Notes

  • You can use leftover sloppy joe mixture for this recipe.
  • For an extra kick, add a pinch of red pepper flakes to the sloppy joe mixture.
  • If you don’t have cheddar cheese, Monterey Jack or a Mexican blend will also work.
