Create a deeply comforting and hearty slow cooker chicken stew using this simple, dump-and-go recipe. Tender chicken and vegetables simmer in a rich broth, making this the perfect hands-off meal for busy weeknights or chilly fall evenings.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups potatoes (Yukon Gold or Russet), cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup heavy cream (optional, for creaminess)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the cut chicken pieces, onion, carrots, celery, and potatoes into the basin of your slow cooker.
  2. Sprinkle the thyme, rosemary, salt, and pepper over the chicken and vegetables. Gently toss to distribute the seasonings.
  3. Pour the chicken broth over the ingredients in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender and cooked through.
  5. In a small bowl, whisk together the flour and cold water until smooth to create a slurry.
  6. Remove the lid from the slow cooker. Stir the flour slurry into the stew.
  7. Cover and cook on HIGH for an additional 15 to 20 minutes, or until the stew has thickened to your liking.
  8. If desired, stir in the heavy cream for a richer texture. Heat through for 5 minutes without boiling.
  9. Taste and adjust salt and pepper if needed.
  10. Ladle the hearty chicken stew into bowls and garnish with fresh parsley before serving.

  • For a gluten-free option, substitute the all-purpose flour with 2 tablespoons of cornstarch mixed with 1/2 cup of cold water.
