Make the taste of summer last all year with this incredibly simple, no-cook strawberry freezer jam. This beginner-friendly recipe uses only four ingredients and requires no water bath canning, preserving the bright, fresh flavor of ripe strawberries.

  • 4 cups fresh strawberries, hulled and crushed
  • 4 cups granulated sugar
  • 1 package (1.75 oz) powdered fruit pectin (like Sure-Jell)
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your freezer containers. You need clean jars or freezer-safe containers with lids. Set them aside.
  2. In a large bowl, combine the crushed strawberries and the granulated sugar. Stir well until the sugar begins to dissolve. Let this mixture sit for 10 minutes.
  3. In a separate small bowl, whisk the powdered fruit pectin into the lemon juice until it is completely dissolved and smooth.
  4. Pour the pectin mixture into the strawberry and sugar mixture. Stir vigorously for exactly 3 minutes. Do not stop stirring during this time to ensure the pectin activates correctly.
  5. Immediately spoon the jam mixture into your prepared freezer containers, leaving about a half-inch of headspace at the top of each jar.
  6. Wipe the rims clean, seal the containers, and let them sit on the counter for 30 minutes to allow the jam to begin setting.
  7. Place the containers in the refrigerator for 24 hours to fully set before freezing.
  8. After 24 hours, transfer the jam to the freezer. This jam keeps well for up to one year.

Notes

  • For a low sugar strawberry freezer jam variation, reduce the sugar to 2 cups and use a low-sugar pectin product, following that product’s specific instructions.
  • If you prefer a smoother texture, you can pulse the strawberries briefly in a food processor instead of crushing them by hand.
  • This jam is ready to eat after 24 hours in the refrigerator if you plan to use it within three weeks instead of freezing it.
