Ingredients
Scale
8 thick slices bread (Brioche or Texas Toast recommended)
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/4 cup milk
1/2 teaspoon ground cinnamon
2 tablespoons butter, for cooking
Syrup and fresh berries, for serving
Instructions
In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy.
Divide the cream cheese mixture evenly between four slices of bread, spreading it to cover the surface. Top each with another slice of bread to create four sandwiches. Gently press the edges together.
In a shallow dish, whisk together the egg, milk, and cinnamon until combined.
Dip each stuffed sandwich into the egg mixture, coating both sides completely. Press lightly so the egg mixture soaks in, but do not let it sit too long or the bread will become soggy.
Melt butter in a large skillet or griddle over medium heat.
Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and crispy on the outside and the filling is warm. Adjust heat as needed to prevent burning.
Slice the stuffed French toast in half diagonally. Serve immediately with syrup and your choice of toppings.
Notes
For a make-ahead option, assemble the sandwiches and refrigerate them overnight. Dip in the egg mixture just before cooking.
Use thick-cut bread to prevent the filling from squeezing out during cooking.
For extra richness, use half-and-half instead of milk in the egg batter.
