Easy sheet-pan sweet potato coins roasted until tender and slightly caramelized, then topped with salty feta cheese and a drizzle of honey. A perfect gluten-free and vegetarian side dish or appetizer.

  • 1.5 lbs sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Slice the sweet potatoes into 1/4-inch thick rounds.
  3. In a medium bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  5. Roast for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly browned at the edges.
  6. Remove the baking sheet from the oven. Sprinkle the crumbled feta cheese over the roasted sweet potato rounds.
  7. Drizzle the honey evenly over the feta and sweet potatoes.
  8. If using, sprinkle with fresh thyme leaves.
  9. Serve immediately.

Notes

  • For crispier edges, ensure the sweet potato rounds are not overcrowded on the baking sheet. Use two sheets if necessary.
  • You can substitute goat cheese for feta if you prefer a milder flavor.
  • A balsamic glaze can be used instead of honey for a different flavor profile.
