1 pound breakfast sausage or bacon, cooked and crumbled
1 (30 ounce) bag frozen tater tots, thawed slightly
1 cup chopped onion
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
12 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
Spread the cooked sausage or bacon evenly over the bottom of the prepared baking dish.
Layer the slightly thawed tater tots over the meat layer.
Sprinkle the chopped onion, cheddar cheese, and Monterey Jack cheese over the tater tots.
In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Pour the egg mixture evenly over the cheese and tater tot layers.
Cover the dish tightly with foil. You can refrigerate at this point for up to 24 hours for a make ahead breakfast casserole.
If baking immediately, bake for 30 minutes covered. If baking after refrigeration, allow it to sit at room temperature for 30 minutes before baking.
Remove the foil and bake for an additional 15 to 20 minutes, or until the eggs are set and the tater tots on top are golden brown and crispy.
Let the cheesy tater tot bake rest for 5 minutes before slicing and serving.
Notes
For a crispier top layer, uncover the casserole for the last 15 minutes of baking time.
You can substitute ham or turkey sausage for the traditional pork sausage.
This recipe freezes well after baking; cool completely, wrap tightly, and freeze for up to three months. Thaw overnight in the refrigerator before reheating.
