Instructions

  1. Pat the tuna steaks completely dry with paper towels. This helps create a good sear.
  2. Season both sides of the tuna steaks generously with salt and black pepper.
  3. Heat the olive oil in a heavy-bottomed skillet (like cast iron) over medium-high heat until it shimmers.
  4. Carefully place the tuna steaks in the hot skillet.
  5. Sear for 1-3 minutes per side, depending on your desired level of doneness. For rare, sear for about 1 minute per side. For medium-rare, sear for 1.5-2 minutes per side. For medium, sear for 2-3 minutes per side. Avoid overcooking, as tuna can become dry.
  6. Remove the tuna steaks from the skillet and let them rest for a minute or two before slicing or serving whole.
